Oven Roasted Pork Chops and Veggies

INGREDIENTS

  • 4 boneless center pork chops
  • 2 cups diced potatoes
  • 1 large yellow zucchini
  • 1 small bunch asparagus
  • 1 Tbsp. olive oil
  • 1 Tbsp. oregano
  • Salt and pepper, to taste

DIRECTIONS

  1. Preheat oven to 375°.
  2. Grease sheet pan with olive oil. Place pork chops in the center of the pan and rub each side with coarse salt. Sprinkle with oregano.
  3. Slice and half zucchini into half moon shapes, and add to the pan. Cut asparagus into 1-2″ strips, and add to pan as well, along with diced potatoes.

4. Bake in the oven for about 35-40 min. For the last 5 min, set to low broil, watching closely to ensure it doesn’t burn.

5. Remove from oven and enjoy!
