Oven Roasted Pork Chops and Veggies

INGREDIENTS
- 4 boneless center pork chops
- 2 cups diced potatoes
- 1 large yellow zucchini
- 1 small bunch asparagus
- 1 Tbsp. olive oil
- 1 Tbsp. oregano
- Salt and pepper, to taste
DIRECTIONS
- Preheat oven to 375°.
- Grease sheet pan with olive oil. Place pork chops in the center of the pan and rub each side with coarse salt. Sprinkle with oregano.
- Slice and half zucchini into half moon shapes, and add to the pan. Cut asparagus into 1-2″ strips, and add to pan as well, along with diced potatoes.

4. Bake in the oven for about 35-40 min. For the last 5 min, set to low broil, watching closely to ensure it doesn’t burn.
5. Remove from oven and enjoy!
