Chicken Bacon Ranch Bowls

INGREDIENTS

  • 2 lbs. boneless, skinless chicken breast, cut into 1” pieces
  • 6 slices bacon, nitrate-free, chopped
  • 1 sweet potato, cubed
  • 2 cups broccoli florets, cut as needed into bite-sized pieces

Ranch Seasoning

  • 1 tbs. dried parsley
  • 1 tbs. dried dill
  • ½ tbs. dried chives
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. black pepper
  • ½ tsp. salt

DIRECTIONS

  1. Preheat oven to 425F and line sheet pan with parchment paper. Set aside.
  2. In a small bowl, combine ranch seasoning ingredients.
  3. Add the chicken, bacon, broccoli and sweet potatoes to a large bowl. Toss with olive oil and ranch seasoning until fully coated. Transfer to sheet pan and spread evenly.
  4. Roast in the oven for 28-30 minutes or until chicken reads 165F and the broccoli and sweet potatoes are soft.
