Greek Quinoa Salad

INGREDIENTS
- 1 cup quinoa, cooked
- ⅓ cup black olives
- ½ cup cherry tomatoes, halved
- 4 cups mixed greens
- ½ cup hummus
- 1 cucumber, diced
- ¼ red onion, sliced
DRESSING INGREDIENTS
- 2 tbs. olive oil
- 1 tbs. lemon juice
- Salt and pepper to taste
DIRECTIONS
- Combine all dressing ingredients in small bowl and set aside.
- In large bowl combine quinoa, black olives, cherry tomatoes, mixed greens, cucumber and red onion. Toss with dressing.
- Divide between 4 bowls and top with 2 tablespoons of hummus each.
- Enjoy!
Note: If wanting a protein boost, add one pound of cooked and cooled shredded chicken.
