Greek Quinoa Salad

INGREDIENTS

  • 1 cup quinoa, cooked
  • 1/3 cup black olives
  • ½ cup cherry tomatoes, halved
  • 4 cups mixed greens
  • ½ cup hummus
  • 1 cucumber, diced
  • ¼ red onion, sliced

DRESSING INGREDIENTS

  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Salt
  • Pepper

DIRECTIONS

  1. Combine all dressing ingredients in small bowl and set aside.
  2. In large bowl combine quinoa, black olives, cherry tomatoes, mixed greens, cucumber and red onion. Toss with dressing.
  3. Divide between 4 bowls and top with 2 Tbsp of hummus each.
  4. Enjoy!

Note: If wanting a protein boost, add one pound of cooked and cooled shredded chicken.
