INGREDIENTS
- 2 large cucumbers
- 2 6-oz. cans low-sodium tuna, drained
- 2 green onions
- ¼ cup Greek yogurt
- ½ cup avocado
- Juice from ½ lemon
- 1 tbs. yellow mustard
- 1 tsp. garlic powder
- Salt and pepper to taste
DIRECTIONS
- Slice cucumbers lengthwise and set aside.
- Place tuna into a bowl and mash until softened. Add onion, Greek yogurt, avocado, lemon juice, mustard, garlic powder, salt and pepper and mix until combined.
- Scoop out tuna mixture and evenly distribute on cucumber slices. Enjoy!
