INGREDIENTS

  • 2 large cucumbers
  • Juice from ½ lemon
  • 2 green onions
  • 2 6 oz. cans low-sodium tuna, drained
  • ¼ cup Greek yogurt
  • ½ cup avocado
  • 1 Tbsp. yellow mustard
  • 1 tsp. garlic powder
  • Salt & pepper, to taste

DIRECTIONS

  1. Slice cucumbers length wise and set aside.
  2. Place tuna into a bowl and mash until softened. Add onion, Greek yogurt, avocado, lemon juice, mustard, garlic powder, salt and pepper and mix until combined.
  3. Scoop out tuna mixture and evenly distribute on cucumber slices. Enjoy!
