Tzatziki Chicken Salad

INGREDIENTS
- 1 lb. cooked chicken
- ½ cup plain Greek yogurt
- 1 medium cucumber, chopped
- 2 cups cherry tomatoes, halved
- ½ red onion, finely chopped
- Juice of 1 lemon
- 6 oz. feta cheese, crumbled
- ½ cup kalamata olives, chopped
- 3 cloves garlic, minced
- 2 tbs. fresh dill, chopped
- 2 tbs. parsley, chopped
- Salt and pepper to taste
DIRECTIONS
- Add all ingredients to a bowl and stir until thoroughly mixed. Serve over mixed greens, rice or in a gluten-free pita.
